Here’s what I did:
Chopped one white onion and sauteed it in a little olive oil, nice and slow. Then I got a roasting pan and threw in the following: Jar of Marinara Sauce (reserve some to top the peppers) , 1/3 can diced tomatoes, 1/2 cup beef broth and half my cooked onions.
I made one cup of white rice and set that aside. I halved my peppers (5 whole) and cleaned them, then I put the halves in a large bowl with about a cup of water in it and microwaved them on high for 7 minutes. I laid the peppers on my sauce and then it was time to mix my meat! (be gentle)
In a mixing bowl, I added 1 lb. ground beef, about 1/2 lb. spicy Italian sausage (removed casings from links), my rice, the other half can of diced tomatoes, a cup of freshly shredded Parmesan cheese, shake of cayenne, shake of red pepper flakes, garlic paste (about 4 cloves worth), salt & pepper.
I stuffed the peppers (and this will make quite a bit of stuffing) and topped them with a bit of the leftover sauce and tomatoes then sprinkled extra Parmesan on top. I covered the pan with foil and cooked them for an hour at 375F. After that, I removed the foil, spooned some of the sauce from the pan on to the peppers and cooked uncovered for another half hour.
If you like Stuffed Green Peppers (you can use any color pepper though, and switch up meats and/or seasoning) this is the last recipe you will ever need. Oh My Good!!
